-posted by Jennifer G. for Laurie C.- Laurie Courage is a Certified Food For Life Educator with the Physicians Committee for Responsible Medicine (PCRM) and founder of Encouraging Greens Inc. She offers group nutrition/cooking classes that help people on the brink of a health crisis to restore their health and enjoy an energetic life for years to come by helping them understand what and how to eat. Laurie writes, "Eleven percent of the U.S. adult population has Diabetes including nearly one-third of those 65 and older. Uncontrolled, diabetes can lead to complications including stroke, loss of vision, heart disease, kidney failure, and various problems due to nerve damage and circulatory problems. Research studies have demonstrated that a plant-based nutrition approach reduces the risk of diabetes and can greatly benefit those who have been diagnosed with the disease." The goal of the Food for Life: Diabetes Initiative program is to empower people who have diabetes and those concerned about developing diabetes, along with their friends and family members with new information and skills. This is a combined program, offering all of the nutrition education from 2 PCRM Food for Life classes - "Intro to How Foods Fight Diabetes" and "Designing a Diet for Maximum Weight Control," along with 5 delicious recipes to sample in 3 hours.
